It’s that time of year again, Christmas is over and it’s time to look to the New Year and here at Sarah’s Cake Blog, it is no exception but first I want to take a look back at 2018 and the first full year of Sarah’s Cake Blog.
This year has been completely craaaazy! I realise that I started this blog in June 2017 so technically this is the first full year of posting on my blog but this year my views are 8x higher than they were in 2017. At the start of the year, I set a series of goals for my blog and they were smashed!! Some of them as early as June and July this year. You people are UTTERLY AMAZING if it wasn’t for you reading, commenting, liking my posts then I would never have got this far so THANK YOU SO MUCH! You have no idea how much I appreciate it and how much it means to me.

Pink Gin Cupcakes
I can’t believe how many of you LOVE this recipe. A scrumptious light sponge with pink gin, and pink gin buttercream. I wanted to make these after I had some pink gin leftover from a friends party. They were a bit of an experiment but they worked! And they are AMMMAZING!
Party Ring Cupcakes
Party Ring Cupcakes are one of my favourite biscuits. My nana always has some in her cupboard when I am visiting so I thought why not turn them into a cupcake? It’s quite hard to put a biscuit in a cupcake so I settled on just making the cupcakes look like the biscuits. Using pastel food colourings and white chocolate drizzle I think they look exactly like the biscuit.
Basic Vanilla Cupcakes
This was the first cupcake recipe I posted after my hiatus from blogging. I have a lot of cupcake recipes on my blog but I had never posted the simple vanilla recipe that makes up the base for a lot of my cupcakes. The recipe is so simple and easy for anyone who wants to make quick but deeelicious cupcakes.
Chocolate Caramel Cupcakes
I can’t believe that these are still so popular, even though they are an Easter recipe. I LOVE a Creme Egg but sometimes you just need something a bit different. These cupcakes are made using the most chocolatey chocolate cupcake recipe ever with a hidden caramel centre just like the eggs. Finished with chocolatey buttercream and a Caramel egg split open. I love the way the caramel oozes out and spills onto the cupcake they look so heavely!
Leftover Easter Cake
Another Easter recipe, although I suppose this can be adapted for any time of year. It is a very similar recipe to my Halloween Sweets Cake. It is a basic vanilla sponge with vanilla buttercream finished with a melted chocolate Easter Egg on top to create the drip and some mini eggs and half an Easter Egg. I love this recipe because it is so adaptable you can put leftover Halloween candy on it or leftover Christmas candy the possibilities are endless.
Strawberry Daiquiri Cupcakes
I was inspired to bake these when I bought Sugar and Crumbs Strawberry Daiquiri Icing Sugar. If you haven’t already you should check them out they do soooo many amazing flavours. The cupcakes contain Rum as well as Strawberry flavouring and Lime zest so they do really taste like a Strawberry Daiquiri Cocktail. The icing sugar tastes like Strawberry Daiquiri too so they are the Ultimate Cupcake for any cocktail lovers!
Chocolate Peanut Butter Cake
Chocolate and Peanut Butter are two of my favourite flavours. I mean who doesn’t love Chocolate? And Peanut Butter in a cake … YUM! I have tried in the past to make Peanut Butter cakes putting Peanut Butter in the actual cake batter and they failed they were just so dry. Until I tried sometime so simple I couldn’t believe I hadn’t thought of it sooner. I used milk to moisten the Peanut Butter and voila we have the lightest, moistest Peanut Butter Cake ever!
Jammie Dodger Cupcakes
These were one of the first recipes I posted on the blog and you still LOVE them. Jammy Dodgers are a delicious biscuit (well 2 biscuits) sandwiched together with raspberry jam. The cupcakes are vanilla flavoured just like the biscuits and there is a hidden raspberry jam centre. I decorated these quite simply with just a mini jammy dodger on top because I think they look so pretty and they don’t really much decoration. These are making me so hungry! I might need to go and make a batch.
Malteser Truffle Cake
This cake is based on the new Malteser Truffles, if you haven’t tried them yet you are seriously missing out! The cake is a simple chocolate cake which I use for a lot of my chocolate cake recipes. The buttercream is made using Malt powder (for example Horlicks) put together the cake is basically a gigantic Malteser. I decorated it using Maltesers, Malteser Truffles and of course SPRINKLES!
So, hopefully, if you are still reading this and haven’t left to go and bake, you’ll be wondering what is the future of Sarah’s Cake Blog? I love baking and I would absolutely love to make this my career in whatever capacity I can. Whether this is my own shop, baking for someone else or working on my blog full time. So Sarah’s Cake Blog will be continuing into 2019. I have even started planning my January posts (how organised am I?!)
As much as I LOVE baking and posting recipes I want Sarah’s Cake Blog to be a bit more. So starting in the New Year I want to include more chatty blog posts. From products, I love at the minute, to reviews of new products, to helpful tips and guideposts. For the past year and a half I have only ever posted recipes and as much as I love being in the kitchen developing and experimenting with recipes I would like to just try something different. Sometimes I see a new product that I try and would LOVE to post about but then change my mind because my blog is only just recipes, or there is a product that I absolutely love using and want to tell you all about so I try and include it in a recipe blurb rather than giving it its own post well now that is all going to change.
I also have been thinking of featuring guest posts from other baking and food bloggers, (if you would like to the be the first to feature please get in contact) both for interviews and recipes (finally putting that journalism degree to good use.) This is just a thought at the minute whether it materialises or not I’m not sure but keep an eye out! I figured it’s my blog so I can post whatever the hell I want!!
My final plan for 2019 is that I would like to try and make some recipe videos and post them to YouTube, I just need to get over being self-conscious that EVERYONE can see me. I might have a few practice runs on Instagram stories first to see how I feel before I post an actual video online. Keep an eye out to see more of me online, especially on YouTube (eek!) I am really really excited about the changes coming in the New Year and I hope you too are excited to see lots more recipes, some new chatty posts and videos too!
